We Don’t Sacrifice Taste, Why Should You?
Through our pop up restaurants I want to show people how easy it is to make meals without meat that are packed with flavour and variety. This isn’t just about food, it’s about good health and wellbeing for ourselves, the environment and animals.
I’m not trying to make the whole world vegan, but if people walk away with a new mentality towards what they eat, then that’ll make me happy. As a chef, I want to destroy this old school “fuck vegetarians” mentality other caterers have. Chefs need to get with the times and become more creative and challenge themselves with their cooking. I was bored of the same old cooking. The only thing that has ever excited me was vegetarian cooking, and over time I’ve organically come to this exciting point in my career where the pop up’s are really taking off. Consumers and chefs alike seem to think that veganism is limited, but it’s not at all. It’s so fucking unlimited.
